Beet Falafel

A beet-falafel is a fun way to incorporate beets into your meals, without the earthy flavor that usually accompanies them.

Ingredients
  • 3 beets
  • 1 cup chickpea flour
  • 1 teaspoon baking powder
  • 3 teaspoons cumin
  • 2-3 cloves garlic, minced
  • ¼ cup fresh cilantro, chopped
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Optional: ½ cup onion, chopped
Instructions
  1. Preheat oven to 375̊.

  2. Wash, peel, and chop beets into 1-inch cubes.

  3. Spread beets evenly on a lined baking sheet. Bake for about 20 minutes, until soft.

  4. Transfer cooked beets to a food processor or blender and mix until smooth.

  5. Add remaining ingredients and mix until well combined.

  6. Scoop 1 Tablespoon of falafel dough at a time onto lined baking sheet. Repeat until baking sheet is full.

  7. Bake falafel for 20 minutes.

  8. Serve warm on salads, in a wrap, or with hummus! Enjoy!
