Rainbow Kale Salad

Rainbow Kale Salad recipe from Down to Earth Organic and Natural.

Ingredients

Salad

  • 1 bunch kale
  • 1 cup shredded carrots
  • 1 cup purple cabbage
  • ¼ cup sliced red onion
  • ½ cup tamari pumpkin seeds

Dressing

  • ¼ cup olive oil
  • 1 lemon, juiced
  • 1 avocado
  • 3 Tablespoons agave
  • 1 teaspoon garlic powder
  • 1 teaspoon chili pepper flakes
  • 1 teaspoon tamari
  • Salt and pepper, to taste
  • ⅛ cup water
Instructions
  1. Remove stems from the kale and place in a large bowl.
  2. Add in remaining Salad ingredients.
  3. Place Dressing ingredients in a food processor or blender and combine until creamy.
  4. Pour Dressing over Salad, and toss well. Enjoy!
