Asian Quinoa
Ingredients
- 4 cups cooked quinoa, cooled
- ¼ cup shredded red cabbage
- ¼ cup diced red bell pepper
- ¼ cup shredded carrots
- ¼ cup corn
- ¼ cup peas
- ¼ cup chopped green onions
Dressing
- ¼ cup lime juice
- 1 clove garlic, minced
- 2½ Tablespoons shoyu
- 2 teaspoons toasted sesame oil
- 1 teaspoon grated ginger
- 1 Tablespoon white miso
- 2 Tablespoons agave
Special Materials: High Power Blender
Instructions
- In a large mixing bowl, combine all salad ingredients.
- In a high power blender, blend all Dressing ingredients until well combined.
- Pour Dressing over salad and toss to combine. Serve and enjoy!
