Coconut Rice with Black Beans

Ingredients
  • 2 cups white Basmati rice
  • 1 (15-ounce) can black beans
  • 1 (15-ounce) can coconut milk
  • 1 Tablespoon dried thyme
  • 1 teaspoon garlic powder
  • 1 Tablespoon hot sauce of choice
  • Salt and pepper to taste
  • 2 Tablespoon olive oil
  • Water, if needed
Instructions
  1. In a large pot, wash and rinse rice until starch is washed away and water is clear. Pour off excess water, leaving rice in pot.
  2. Add beans with liquid into rice pot.
  3. Add coconut milk, thyme, garlic powder, hot sauce, salt and pepper. Stir to combine.
  4. Drizzle with olive oil.
  5. Add additional water if needed to ensure that liquid is about ½ inch over rice.
  6. Bring mixture to a boil, cover and simmer on low for 20-25 minutes.
  7. Serve and enjoy!
