Creamy White Bean Pizza

Ingredients
  • Whole wheat flour
  • 1 prepared pizza crust of choice
  • 3 Tablespoons extra virgin olive oil + more to drizzle
  • 4 cloves garlic, minced
  • 1 Tablespoon dried thyme
  • 1 Tablespoon dried rosemary
  • 2 teaspoons red chili pepper flakes
  • 2 (15-ounce) cans white beans like Cannellini beans, Great Northern beans or navy beans
  • Salt and pepper to taste
  • Water
  • 2 teaspoons red wine vinegar
  • 1 cup roughly chopped artichoke hearts
  • 1 cup sun-dried tomatoes
  • 2 cups fresh spinach
Instructions
  1. Preheat oven to 500°. Dust a large baking sheet with flour. Place prepared pizza crust on baking sheet and set aside.
  2. Heat oil in a large skillet over medium heat. Stir in garlic, thyme, rosemary and chili flakes. Sauté for 2-3 minutes or until fragrant.
  3. Add in white beans. Season with salt and pepper. Pour in enough water to just barely cover beans. Set heat to medium high and stir constantly until water is absorbed. Beans should be soft and tender. Gently smash beans with the back of a wooden spoon.
  4. Remove from heat. Drizzle red wine vinegar over beans. Beans can be processed with a little olive oil in a food processor or blender for a smoother consistency or served as is for a more textured pizza.
  5. Drizzle olive oil over prepared pizza crust. Spread white bean mixture over pizza crust.
  6. Top pizza with artichoke hearts, sun-dried tomatoes, and spinach. Drizzle olive oil over entire pizza.
  7. Bake for 10-15 minutes or until crust is golden brown. Let cool before cutting. Serve and enjoy!
