Vegan Chipotle Aioli

A creamy, spicy mixture that can be used as a dip or spread.

Ingredients
  • 13 Cup almonds
  • 23 Cup water
  • 2 Tablespoons almond milk
  • 2 Tablespoons aquafaba (chickpea brine)
  • ¼ Cup chickpeas
  • ½ Cup sundried tomatoes
  • Juice of 1 lime
  • 2-3 garlic cloves
  • 1 Tablespoon nutritional yeast
  • 1 Tablespoon chipotle hot sauce
  • 1 teaspoon chili powder
  • ½ teaspoon salt
Instructions
  1. In a small bowl, pour the water over the almonds and soak for at least 15 minutes.
  2. When the almonds are finished soaking, drain the water.
  3. Add the soaked almonds, almond milk, aquafaba, chickpeas, sundried tomatoes, lime juice, garlic, nutritional yeast, hot sauce, chili powder, and salt to a food processor and blend until creamy.
  4. Transfer to a serving bowl, and enjoy as a dip or spread!
