Lentil Hummus

Lentil Hummus recipe from Down to Earth Organic and Natural.

Ingredients
  • 1 cup dried green lentils
  • 2 cups vegetable broth
  • 1 small shallot, minced
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 6 medium sized cloves of garlic
  • 2 Tablespoons finely minced rosemary
  • 1/2 cup cashew butter
  • 1/2 cup olive oil
  • Juice and zest of 1-2 lemons
  • 1 cup loosely packed parsley
  • Salt and pepper, to taste
Instructions
  1. Combine lentils, broth, shallot, bay leaf, and thyme in a pot on the stove and bring to boil. Reduce heat and allow to simmer for about 45 minutes, until the liquid has evaporated. Remove the bay leaf and add the minced rosemary. Allow to cool down.
  2. Preheat oven to 350° Fahrenheit. Toss garlic cloves in a bit of oil and roast for 30-45 minutes. Remove from the oven and allow to cool down. Squeeze out the soft garlic flesh from the papery shell.
  3. Blend all ingredients in a food processor until smooth. Adjust seasoning to your taste. Serve and enjoy!
