Black Bean and Corn Dip

Black Bean and Corn Dip recipe from Down to Earth Organic and Natural.

6-8 Servings
Ingredients
  • 3 Tablespoons safflower oil
  • ½ cup diced yellow onion
  • 1 (8-ounce) container of vegan cream cheese
  • 1 cup chunky salsa- mild or hot
  • 3 cups tomatoes, diced
  • 1 can black beans, rinsed
  • 1 ½ cups corn (fresh, canned or frozen-defrosted)
  • 2 teaspoons garlic, minced
  • 3 Tablespoons diced red onion
  • ½ cup chopped cilantro
  • 2 limes, juiced
  • Salt and pepper to taste
Instructions
  1. Heat oil in skillet. Add onions and sauté until translucent.
  2. Stir in cream cheese and salsa until melted and well combined. Remove from heat.
  3. In a large bowl combine, tomatoes, black beans, corn, garlic, red onion, cilantro, limes, salt and pepper.
  4. Stir in cooled sauté mixture. Serve with corn chips and enjoy!
