Molasses Cookies
Ingredients
- 2 cups all-purpose flour
- 2 teaspoons baking soda
- 2 teaspoons cinnamon
- 1 teaspoon cardamom
- ¾ teaspoons ground ginger
- ½ teaspoon cloves
- ¼ teaspoon nutmeg
- ½ teaspoon salt
- 2⁄3 cup brown sugar
- ½ cup butter, melted
- 1⁄3 cup molasses
- 1 Tablespoon flaxmeal + 2 Tablespoons water soaked for 15 minutes
- 1 teaspoon vanilla
- ½ cup raw sugar, for rolling
Instructions
- Preheat oven to 350º.
- In a medium mixing bowl, whisk together flour, baking soda, cinnamon, cardamom, ground ginger, cloves, nutmeg, salt, and brown sugar.
- In a separate bowl, mix melted butter, molasses, soaked flaxmeal, vanilla.
- Pour the wet ingredients into the dry and mix until fully combined.
- Scoop 1 Tablespoon of the dough, roll into a ball, coat with raw sugar, and place on a lined baking sheet. Repeat this process until all dough has been used.
- Bake cookies for 8-10 minutes. Allow to cool for 10 minutes. Serve warm and enjoy!
