Italian Spinach

  • 1 bunch spinach, washed and stems removed
  • 1-2 Tablespoons olive oil
  • 3 Tablespoons lemon juice
  • 2 cloves of garlic, minced
  • Salt and pepper to taste
  • ½ cup toasted pine nuts


  1. Steam spinach until softened but vibrant in color.
  2. Remove spinach from steamer and place in a serving dish.
  3. Dress with olive oil, lemon juice, garlic, salt and black pepper and gently toss.
  4. Sprinkle with toasted pine nuts and serve on pasta or as a side dish. Enjoy!
