- 1 bunch spinach, washed and stems removed
- 1-2 Tablespoons olive oil
- 3 Tablespoons lemon juice
- 2 cloves of garlic, minced
- Salt and pepper to taste
- ½ cup toasted pine nuts
- Steam spinach until softened but vibrant in color.
- Remove spinach from steamer and place in a serving dish.
- Dress with olive oil, lemon juice, garlic, salt and black pepper and gently toss.
- Sprinkle with toasted pine nuts and serve on pasta or as a side dish. Enjoy!
