Cilantro Lime Beet Chips

Using beets instead of potatoes is a great way to make a healthier version of the classic favorite.
Yield
3-4 servings
Ingredients
  • 3-4 beets
  • Juice of 2 limes
  • ¼ cup cilantro, chopped
  • ½ teaspoon salt
Instructions
  1. Preheat oven to 425⁰.
  2. Wash and peel beets. Slice thinly.
  3. Add sliced beets to a large bowl and toss with lime juice, cilantro, and salt until completely coated.
  4. Place beets on a lined baking sheet, careful so the beets do not overlap. Bake for 25-30 minutes, flipping halfway through.
