Picnic Potato Salad Recipe from Down to Earth Organic and Natural

  • 6 large red potatoes
  • ¾ cup diced celery
  • ¾ cup sliced olives
  • ¼ cup diced red onion
  • ¼ cup sweet pickle relish


  • ½ cup vegan mayonnaise
  • ½ teaspoon Dijon mustard
  • 4 teaspoons of your favorite balsamic vinaigrette
  • Salt and pepper to taste


  1. Boil potatoes until soft all the way through. Do not overcook! Drain and let cool before cutting into bite-size chunks.
  2. In a large bowl combine potatoes, celery, olives, red onion and pickle relish.
  3. In a small bowl combine Dressing ingredients. Mix well and add to potatoes. Add salt and pepper.
  4. Serve chilled and enjoy!
