Picnic Potato Salad Recipe from Down to Earth Organic and Natural
Ingredients
Salad
- 6 large red potatoes
- ¾ cup diced celery
- ¾ cup sliced olives
- ¼ cup diced red onion
- ¼ cup sweet pickle relish
Dressing:
- ½ cup vegan mayonnaise
- ½ teaspoon Dijon mustard
- 4 teaspoons of your favorite balsamic vinaigrette
- Salt and pepper to taste
Instructions
- Boil potatoes until soft all the way through. Do not overcook! Drain and let cool before cutting into bite-size chunks.
- In a large bowl combine potatoes, celery, olives, red onion and pickle relish.
- In a small bowl combine Dressing ingredients. Mix well and add to potatoes. Add salt and pepper.
- Serve chilled and enjoy!
