Vegan Garlic and Spirulina Fish

Vegan Garlic and Spirulina Fish recipe from Down to Earth Organic and Natural.

Ingredients
  • 3 Tablespoons olive oil
  • 1/3 cup sliced garlic
  • ½ stick vegan butter
  • 1/3 cup minced garlic
  • ½ teaspoon sea salt, more if needed
  • 1 cup chopped kale
  • 1 cup chopped red bell pepper
  • 1 large shallot, chopped
  • 2 Tablespoons mirin
  • Zest of 1 lemon
  • ½ lemon, juiced
  • 1 (10.5 ounce) box frozen fish, baked and de-breaded, and cut into strips
  • ½ teaspoon spirulina
  • 1-2 pinches red pepper chili flakes
  • Black pepper, to taste
  • 2-3 Tablespoons cilantro

 

Instructions
  1. Heat olive oil over medium heat in a large skillet.
  2. Add sliced garlic and cook until crispy golden brown and remove from skillet. Let cool.
  3. Heat vegan butter in skillet. Add minced garlic and salt. Add kale, bell peppers, and shallots. Cook until vegetables are soft.
  4. Add mirin, lemon zest, and lemon juice. Cook and stir for about 1 minute.
  5. Add vegan fish, and stir in spirulina, red pepper chili flakes and black pepper. Cook for another 5 minutes. Garnish with fried sliced garlic and cilantro. Serve and enjoy over pasta or rice!
