Raw Caesar Salad

Very rich and soooooo delicious!
Yield
Serves 4-6
Ingredients
  • 1-2 heads of romaine lettuce

Caesar Dressing

  • 5 Tablespoons raw tahini
  • ¼ cup pine nuts
  • 2 Tablespoons tamarind paste (optional)
  • 1 clove garlic
  • 2 scallions, or 1/4 cup sweet onion
  • 1 lemon, juiced
  • 3 Tablespoons apple cider vinegar
  • Pinch of stevia, to taste
  • 3 Tablespoons nutritional yeast
  • 1-2 teaspoon black pepper, to taste
  • 1-2 teaspoons salt, to taste
  • 2 Tablespoons virgin olive oil (optional)
  • 2 Tablespoons of water at a time as necessary for consistency

           Pinenut Parmesan

  • ¼ cup pine nuts
  • ¼ cup whole cashews or macadamia nuts
  • 1 teaspoon virgin olive oil or fresh water
  • 2-3 Tablespoons nutritional yeast
  • Pinch of garlic powder
  • Pinch of salt
Instructions
  1. Wash lettuce and dry, break into bite sized pieces. Set aside.
  2. To prepare the Dressing: In a blender, combine all ingredients, adding the oil and water 2 Tablespoons at a time until it is very smooth. Adjust to taste for pepper and salt. Makes 1 pint. Will keep refrigerated for 1 week.
  3. For the Pinenut Parmesan: In a food processor or blender, chop pine nuts and cashews or macadamias into a fine meal. Drizzle in a little oil or water. Pulsing until moist and ground. Add nutritional yeast, garlic powder and salt. Pulse until crumbly.
  4. To assemble, dollop a few tablespoons of dressing onto the romaine and mix until well coated, but not drenched, adding more as necessary.
  5. Serve sprinkled with pinenut parmesan.  Enjoy!
