Mango Mac-Nut Bread

If you love banana bread, wait til you try mango bread! This recipe is perfect for a summer brunch or anytime you can get your hands on some great local mango!

Ingredients
  • 1 1/2 cups ripe mango chunks
  • 1/2 cup macadamia nuts, chopped
  • 2/3 cup maple syrup
  • 1/4 cup plant milk
  • 1/2 cup applesauce
  • 1 teaspoon lemon juice
  • 1 tsp vanilla extract
  • 1/3 cup coconut oil
  • 2 cups flour of choice (For a gluten-free option like the one shown in our video link, we recommend using a Gluten-Free 1:1 Flour like Bob's Red Mill - see Shopping List below) 
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
Instructions
  1. Preheat oven to 350º F
  2. Combine flour, baking soda, baking powder and salt in a mixing bowl
  3. Mash mango chunks and lemon juice with a fork until smooth, then add maple syrup, plant based milk, applesauce, vanilla extract and coconut oil
  4. Combine wet ingredients with the dry. Fold in chopped macadamia nuts until evenly combined
  5. Pour batter into a lined bread pan. Optional: Top with more macadamia nuts
  6. Bake at 350º for 50 minutes or until a toothpick inserted in the middle comes out clean
