Herbed Cheddar Scones

These scones are a savory snack featuring fresh herbs, rich goat cheddar, and sweet tart cranberries. Serve with soups, salad, or alone as a snack.

Ingredients
- 1 cup spelt flour
- 1 cup whole wheat pastry flour
- 1 cup all-purpose flour
- 1 Tablespoon baking powder
- 1 teaspoon sea salt
- ½ teaspoon fresh cracked black pepper
- 1½ cups dried cranberries
- 1 cup chopped fresh basil
- 1 cup chopped fresh dill
- ¼ cup soft goat cheese, chopped
- ½ cup shredded goat cheddar cheese
- 1½ cups milk or non-dairy milk
- 1 Tablespoon apple cider vinegar
Instructions
- Preheat oven to 425°. Line two baking sheets with parchment paper.
- In a large bowl mix together flours, baking powder, salt, and pepper. Toss in cranberries, basil, dill, and cheeses and stir gently to combine.
- Stir together milk and vinegar, and let stand one minute to curdle. Pour milk into flour mixture, stirring slowly until combined well.
- Scoop dough by ¼ cup measures onto baking sheet. Mound slightly with your fingers. Bake 15-20 minutes or until scones are golden brown. Let cool slightly before removing from baking sheet.
- Serve warm or cool, and enjoy alongside soups or salads!
