Cilantro Lime Beet Chips

Using beets instead of potatoes is a great way to make a healthier version of the classic favorite.

Ingredients
- 3-4 beets
- Juice of 2 limes
- ¼ cup cilantro, chopped
- ½ teaspoon salt
Instructions
- Preheat oven to 425⁰.
- Wash and peel beets. Slice thinly.
- Add sliced beets to a large bowl and toss with lime juice, cilantro, and salt until completely coated.
- Place beets on a lined baking sheet, careful so the beets do not overlap. Bake for 25-30 minutes, flipping halfway through.
