Vegan Affogato

Traditionally made with espresso over ice cream, this vegan version incorporates those great flavors with healthier ingredients.

Ingredients
- ½ cup strong coffee (regular or decaf)
- Few drops orange extract (optional)
- 1 pint of your favorite vegan vanilla ice cream like Coconut Bliss® Vanilla
- 2 teaspoons cacao nibs
- 1 teaspoon slivered almonds
Instructions
- Prepare your favorite coffee: drip, espresso, French-press or instant; set aside to cool.
- If desired, stir in a few drops of orange extract.
- Place a scoop of vegan ice cream in each serving cup.
- Pour an ounce of coffee over the ice cream and immediately garnish with the cacao nibs and slivered almonds. Enjoy!
