Green Pear Salad

This is a fall version of Vietnamese green papaya salad.

Ingredients
Dressing
- 1 garlic clove, minced
- ⅓ cup lime juice
- 3 Tablespoons soy sauce or liquid aminos
- 2 Tablespoons brown sugar
- ½-1 teaspoon chili paste, to taste
Pear Salad:
- ¼ cup finely chopped green onions
- ¼ cup finely chopped cucumber
- ½ cup finely chopped pear + 1 cup julienned
- 2 cups mixed greens of choice
- ¼ cup finely sliced red onions
- ½ cup julienned carrots
- 1 teaspoon lemon zest
- 1 teaspoon sesame seeds
- 1 teaspoon chopped cilantro
Instructions
- In a small bowl, whisk all Dressing ingredients until garlic is broken down.
- Toss green onions, cucumber, and chopped pears into dressing.
- Place on top of mixed greens.
- Layer julienned pears, red onions and carrots on top.
- Sprinkle lemon zest, sesame seeds, and cilantro all over to garnish. Enjoy!
