Minty Pea Dip

This refreshing dip is ideal on a hot day with some cold cut veggies or on some warm toast. With such a great flavor, you won't realize how much green goodness you're eating.
Yield
1 - 1½ Cups
Ingredients
  • 3 cups peas
  • ⅓ cup fresh mint leaves
  • Zest and juice of 1 lemon
  • 2 Tablespoons olive oil
  • 1 Tablespoon almond butter
Instructions
  1. Boil peas in water for 1 minute. Drain quickly and rinse with cold water until cooled.
  2. Combine peas and remaining ingredients in a food processor. Pulse until creamy. You may need to stop a couple of times to scrape down the sides of the processor. Serve immediately or chill in the refrigerator for about half and hour. Can be refrigerated for up to a week. Enjoy!
