Local Tomato Corn Salsa

Local Tomato Corn Salsa recipe from Down to Earth Organic and Natural.
Yield
1 - 1 1/2 cups
Ingredients
  • 6 large local tomatoes
  • ½ jalapeño, with seeds
  • 2 cobs of corn
  • ⅛ cup diced red onion
  • ⅛ cup chopped green onion
  • 1 clove garlic, minced
  • 1 cup chopped cilantro
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 3 limes, juiced
  • Salt and pepper to taste
Instructions
  1. Dice 4 tomatoes and place in a mixing bowl.
  2. Blend together remaining tomatoes and jalapeño in a blender. Add to diced tomatoes.
  3. Remove corn kernels from cob. Add to tomato mixture.
  4. Add remaining ingredients and mix well. Serve and enjoy!
