Black-Eyed Pea Salsa

Black-Eyed Pea Salsa recipe from Down to Earth Organic and Natural.
Ingredients
  • 1 cup black-eyed peas
  • 1-2 ripe papayas, peeled and cubed
  • 2 tomatoes, finely chopped
  • 1 red bell pepper, finely chopped
  • 1 purple onion, finely chopped
  • 1 medium chile pepper, diced
  • 2 Tablespoons diced jalapeno peppers
  • ⅓ cup cilantro, finely chopped
  • 3 Tablespoons lemon juice
  • 1 clove garlic, diced
  • 1 teaspoon sea salt
  • 1 teaspoon cumin powder
  • 1 teaspoon chili powder
Instructions
  1. Rinse and soak black-eyed peas in 3 cups of water for 6-8 hours. Drain and rinse and allow to sit on the counter for 8-12 hours. Now they're ready to be eaten. The longer they keep growing, the more their nutritional value increases.
  2. Combine all ingredients in a large bowl. Refrigerate to allow the flavors to mix. Enjoy!
