Coconut oil makes this recipe so mouthwatering and moist no one will guess that it’s vegan!
Yield
1 Bread Loaf
Ingredients
  • ½ cup whole raw macadamia nuts
  • 1 cup organic whole wheat pastry flour
  • ¾ cup organic unbleached white flour
  • ½ teaspoon baking soda
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon salt
  • ½ cup unrefined coconut oil
  • ½ cup dark brown sugar (unprocessed is best)
  • ½ cup organic granulated sugar
  • 1 cup very ripe bananas, mashed
  • ⅓ cup silken tofu, drained and mashed
  • ¼ cup soy milk
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon vanilla extract
  • ½ cup vegan chocolate chips (optional)
Instructions
  1. Preheat oven to 350°. Line a baking sheet with parchment paper. Spread macadamias on baking sheet and roast for 5-7 minutes. Remove from oven and let cool.
  2. Sift together flours, baking soda, cinnamon, nutmeg and salt in a large bowl.
  3. Meanwhile, combine coconut oil and sugars in a blender and blitz for 1 minute. Add banana, tofu, soy milk, vinegar and vanilla and process until smooth.
  4. Fold wet ingredients into flour mixture and stir until just incorporated.
  5. Chop roasted nuts coarsely. Fold nuts and chocolate chips (optional) into batter. Grease a loaf pan with coconut oil and pour in batter. Sprinkle top of batter with sugar if desired (it will caramelize and create a delicate crust).
  6. Bake 1-1½ hours or until a toothpick inserted into the center of the loaf comes out clean. Remove from oven and let cool. Serve as breakfast, dessert or as a snack. Enjoy!
