Ingredients
  • 1 cup shredded coconut, soaked 4 hours
  • ½ cup macadamia nuts, soaked 4 hours
  • ½ cup chopped red bell pepper
  • ¼ cup nutritional yeast
  • Juice of 2 limes
  • ¾ cup chopped fresh cilantro
  • 1 garlic clove
  • 2 Tablespoons chopped red onion
  • ¼ teaspoon cayenne
  • Salt to taste
  • 1 teaspoon smoked paprika
  • 2 large cucumbers, sliced into rounds
  • Juice of 1 lemon
  • 2 teaspoons ancho chili powder
  • Salt and pepper to taste
Instructions
  1. Drain excess water off coconut and macadamia nuts.
  2. Combine coconut, nuts, red bell pepper, nutritional yeast, lime juice, cilantro, garlic, onion, cayenne, salt and smoked paprika in a food processor. Blend until smooth.
  3. Place cucumber slices in a large bowl and coat with lemon juice, ancho chili powder, salt and pepper.
  4. Spoon about a Tablespoon of coconut dip onto each cucumber slice. Place on a serving tray. Enjoy!
